White Chestnuts
White chestnuts are shelled dry chestnuts obtained through a strictly crafted process that has its roots in the Mont Blanc tradition. Fresh chestnuts after crunching are placed on dryers, called "gratali".
The drying phase has a different life span depending on the type. Air drying lasts 7 days, while wood drying is about 15 days. After finishing this stage of the production process, the chestnuts are shelled and selected on tape.
The Perrotta chestnuts are carefully selected and are free of additives, whiteners and preservatives. Rigorous fault control and residual moisture measurement ensure long life.
They can be used in the kitchen for the preparation of soups and sweets.
